Sour Cream Enchiladas

2 Chicken Breast
1 Small Onion
2 Poblano Pepper
2 Jalepeno Pepper
2Tbsp Oil
16oz Sour Cream (separated)
10 Corn/Flour Tortillas
16oz Shredded Monterrey Jack Cheese (separated)
1 Cup Milk
2 Tbsp Flour

OPTIONAL
Chipotle Seasoning
Salt and pepper

1. Pre-heat oven to 400 degrees

2. Boil chicken for 45 minutes with salt, pepper, and chipotle seasonings, drain, cool, and shred.

3. Dice your peppers into large pile

4. Dice Onion

5. Saute 2/3 of the peppers with onion

6. Mix sauted peppers and onions with chicken

7. Mix in 1/2 cup of sour cream and 1 1/2 cups of cheese with chicken and peppers.

8. Lay Flour/corn tortilla flat, and spoon in mixture. (I used a white corn as well as a flour tortilla. I prefer the taste of flour. The corn is smaller)

9. Roll up and place seam side down in large baking dish

10. In saute pan, use a whisk to stir together remaining peppers, 1cup milk, and 2Tbsp of flour.

11. Add in remaining sour cream and cheese, stirring until smooth
(sadly, I forgot to take a picture of this step. However, you will see the look of the sauce in the next photos)


12. Pour over each Enchilada

13. Bake for 20-25 minutes, until bubbly

15. Let sit for 5-10 minutes before serving! Now, with mine, I neglected to save some sauce to pour on after they cooked, however, I recommend that you do this!

Cheese Taquitos

Ingredients
  • Butter
  • shredded cheese
  • tortilla shells
1. Put a light layer of butter on one side of the tortilla shell (some people prefer using a butter spray)

2. On un-buttered side, fill with cheeses. I made this fast for Thumbelina, so it's just sharp, but use as many types as you like. Sharp, Monterrey, Mexican.

3. Roll up, pulling sides in first, and then rolling.

4. Fry in pan on medium high heat until browned on each side

Grilled Chicken Fajitas, American Style

This is my mothers recipe. Despite her faults, she could make some awesome meals.

Ingredients:
  • 4 chicken breast
  • 2Tbsp LIGHT Brown Sugar
  • Worcestershire Sauce
  • Lime juice
  • Fiesta Lime seasoning
  • Cumin (just a sprinkle)
  • Tortilla shells
  • 1 Onion
  • 1 Green Pepper
  • 2 squirts Lemon juice
Optional Ingredients for putting together Fajitas:
  • Sour Cream
  • Shredded Cheese
  • Salsa
  • guacamole
  • (anything else you like! :) )
1. Marinate the chicken overnight in a lime juice and Worcestershire mix

2. Grill chicken

3. Slice grilled chicken into strips

4. Slice Onion and green pepper, seasoning with a Fiesta Lime seasoning

5. Start sauteing and sprinkle with a little bit of cumin

6. OPTIONAL STEP: While sauteing the vegetables, mix 1/3 cup of Worcestershire sauce, 2Tbsp of brown sugar, and two small squirts of lemon juice. This can be made to taste, so play around until you find what you like, or even leave out completely! Some people do not like this

7. Mix sliced chicken with sauteing veggies and (0ptional) add 2Tbsp of sauce mixture.

8. Line bowl with tinfoil, and scoop into tinfoil. Close tinfoil to retain heat

9. Heat each tortilla in pan, lightly browning. Place in Tortilla dish

Cheesy Taco Bake

We love mexican in our family. Almost as much as we love Italian. So, tonight, as a different spin on things, I decided to make a Taco Bake instead of regular tacos.

Ingredients:
1 medium Onion
2tsp EVOO (extra virgin Olive Oil)
1.5 tsp Cayenne Pepper
Taco Seasoning (either pack or make yourself)
8 flour tortillas
8 cups shredded cheese (28 oz)
2/3 cup of milk
1.5-2lbs hamburger meat
1/2 cup water
Sour Cream
Shredded Lettuce
Tomato

1. Preheat oven to 350

2. Brown your hamburger meat and drain. Apparently there is a new movement where people rinse their cooked hamburger with water. Please do not do this. Use chicken instead or something, but do not ruin the meat.


3. Add meat back to the pan and add 1 cup of water and taco seasoning mix, bring to slight boil, reduce to medium heat and leave for 4 minutes.

4. Chop your onion into small cubes. I have this, and it's the only ASOTV item I have ever liked. Add 2tsp EVOO to pan and saute your onions on high heat until browned. Set aside.

5. Mix the milk and the cheese into a saucepan and cook until melted. Add Cayenne pepper and sauteed onions

6. Using 9x11 (or similar size) pan, butter spray the bottom lightly, and then add two tortillas, side by side. They will overlap, this is fine.

7. Spread 1/2 the meat mixture on top, covering to the edge

8. Cover meat mixture with 2 more tortillas, like you did the bottom.

9. Spread 3/4 cheese mixture on top, spreading till near the edge.

10. Repeat step 8


11. Mix remaining cheese with remaining meat and spread on top.

12. Lightly butter the top of the remaining tortillas, and place on top of meat and cheese.

13. Bake in oven for 15 minutes

14. Remove and let cool, topping with sour cream, shredded lettuce, and tomato. (even extra shredded cheese if wanted)
